The first wine in our famous Illustration Series, crafted primarily from the first harvest of our steep Amphitheatre chardonnay parcel with its 51 degrees incline and intense minerality, with Pinot Noir from our chalky, sloping Hillside parcel completing the composition.

After four years on the lees and a couple of years kept on cork, this wine shows a fine balance with a core of freshness but generosity of texture, with some nutty notes creeping in amongst the bright citrus.

This second release in The Illustration Series shows the unique long cool season of the 2019 vintage. The grapes selected here come from a very late harvest of our steep south facing slope and the resulting wine shows just why we strive for a long hangtime, picking as late as possible.

With our cool climate this wine has kept a great spine of acidity, counterbalanced by tropical fruit notes and a creamy texture, a result of concentration building in our grapes through the final days of harvest.

The second rosé vintage for Hundred Hills, our Signature Rosé is an assemblage rosé made by combining carefully selected clear base wines with a delicate red base wine, a process critical in helping create our bright, fresh signature style.

This wine is produced entirely from north and east facing parcels in a cool vintage, then aged on the lees for 55 months, creating a textural rosé with plenty of freshness and a myriad of flavours spanning red fruits to white peaches.

Our fourth consecutive Blanc de Blancs made using chardonnay from our tiny Hill Top parcel. These south-facing vines sit on the vineyard’s thinnest topsoils, producing grapes of exceptional concentration and remarkable potential for long ageing.

Despite the record-breaking solar vintage, the resulting wine still has a powerful spine of acidity. Aging in Rousseau oak cask helps to open the wine up and show real generosity alongside ripe citrus fruit, salinity and toastiness.

From the long, cool 2021 vintage, this is only our second Blanc de Noirs, again crafted from a single Hillside parcel.

A wine that continuously unfolds with increasingly engaging aromas and flavours, both on the nose and on the palate, with delicate raspberry and roast plum alongside a soft creaminess. Beneath the surface, something riper and more exotic than the cool vintage might suggest: cherries and fresh figs with an ever so slight hint of sun-dried raisons.

With a riper fruit profile and rounder texture, Preamble No.2 captures the late-harvested spirit of Hundred Hills in an approachable style – a wine as equally at home on a sunny afternoon in the garden as it is at the finest restaurant tables.

From the long, cool 2021 season, and from grapes with almost 120 days on the vine, this vintage’s Preamble No.2 is a tightly knit band of yellow apple and pear, centred around a core of crisp acidity. True elegance and real finesse.

Produced from the warm, dry 2018 vintage. This wine, a combination of east facing pinot noir and south facing chardonnay, naturally found a perfect balance of acidity, fruit and texture, without even the hint of any dosage sugars.

Without dosage, notes which are usually overshadowed by fruit are allowed to shine through. There is a pleasant saltiness in this wine that makes it particularly gastronomic, and a nuttiness starting to appear as oxygen comes into play with aging.

The second Blanc de Blancs from our tiny, south facing Hilltop parcel of Chardonnay, this small tranche was held back on the lees for a lengthy six years, allowing some of the more complex autolytic notes coming from the lees breaking down to shine through.

On top of the familiar bright citrus notes found in our Blanc de Blancs, there is a satisfying freshly baked pastry note followed by a long finish of spice, honey and beeswax. Beautiful now, this wine will keep improving over the coming decades.

This second release in our Illustration Series highlights the long cool season of the 2019 vintage and the long, 120 day hang time the grapes experienced on the vine as a result.

With our cool climate, this wine has kept a great spine of acidity, counterbalanced by tropical fruit notes and a creamy texture, a result of concentration building in our grapes through the final days of harvest. Aging in magnum has given the fruit an even richer profile and the texture an extra creaminess.

Produced in the sunny and dry 2018 vintage, our Signature Rosé is crafted predominantly from Pinot Noir with a little Chardonnay for freshness.

We look to create rosés that drink more like a white sparkling wine, bright and fresh with an intensity of fruit. This is enhanced by the red fruit flavours and herbaceousness extracted from the skins of our pinot noir giving this wine even greater gastronomic potential, pairing well with both sweet and savoury dishes.

The very first Blanc de Noirs produced at Hundred Hills, made by gently bunch pressing only the finest musts from our Pinot Noir, resulting in a clear sparkling wine made from the black grapes.

The cooler 2019 season allowed a great balance between freshness and richness, with complex fruit notes of blood orange and peach. The resulting wine has been rated by Jancis Robinson as one of the very finest English wines she has tasted.
