Great wines are made in vineyards, not in wineries, and from grapes that can slowly grow and ripen in the cool climates that allow them the time to express the hundreds of delicate aromas and flavours that ultimately deliver the fine wines we love. We only ever make wines from the finest grapes from our own vineyard and tightly control quality at every stage along the road, from planting vines to popping corks.
We make ‘clean, clear’ wines that aim to reflect a sense of time and place in the way the very best Burgundies seek to do. Our wines will vary year by year and our winemaking will always be minimalist in style allowing as pure a vintage expression of our vineyard as possible.
Steep chalk slopes, warmed gently through the English summer, and soils poor enough that every year the vines must struggle for survival and produce the most enticing grapes they can.
From the outset we focused on the low yielding, high quality forms of Pinot Noir and Chardonnay that had produced so many great wines in Burgundy and Champagne during the twentieth century, now the climate of Southern England in the twenty-first.
We carefully segmented our vineyard into ten parcels, each with their own aspect, slopes and soils, and now all filled with different Chardonnay and Pinot Noir vines. We selected some classics such as Chardonnay 95 on the thin soils and steep slopes of our ‘Amphitheatre’ Vineyard and Pinot Noir 115 on the gentle East facing slopes where a lengthy growing and ripening season could allow them to fully express their potential.
Our award winning Chiltern Barn, set down in the floor of the Stonor Valley and surrounded by the vineyards, houses a state of the art winery, wine cellars, beautiful tasting rooms and its own wine library where fine wines from around the world can be sampled.
Our winery benefits from natural night-cooling and houses sophisticated temperature control systems for each wooden cask and steel tank, beneath the floors. There is capacity for each of the vineyard parcels to be vinified separately before being tasted and either combined or kept apart as desired to create the most exciting and distinctive wines of each season. Our tasting rooms above the winery allow up to sixteen guests to enjoy dinner and our cellars house our long aging magnums in a naturally cooled environment.
From the moment the presses flow with fresh musts the sole objective is to protect the delicate flavours and aromas of our wines.
We work hard to care for the land our vineyards rely on and to contribute to the beauty of landscape around us. We enjoy pristine virgin soils and have never used herbicides, relying heavily on cover crops to help sustain the soil nutrients our vines need. We want Hundred Hills to still be here, still making great wines and to still be beautiful long after we’re gone!
Our state-of-the-art winery incorporates a wide range of features to deliver best practice in sustainable winemaking. Located right in the heart of the vineyards there is no need to transport grapes long distances for pressing. A well insulated winery uses naturally vented cooling during nighttime to keep the winery at a stable temperature year round and real time energy and water controls help limit energy and water usage. With no need for fining, all our wines are vegan and with light, eco-design bottles and fully recyclable packaging we try to keep our carbon footprint to a minimum. We are reducing our carbon impact year on year with net-zero as a clear near term goal.
