    From 2017 the first release of our Preamble No.2, a hugely popular sparkling, now displaying ripe creamy stone fruit flavours with a touch of almond; this is accompanied by our strikingly linear 2017 Blanc de Blancs with complex aromas, ranging from ripe lemon zest and Japanese yuzu through to light pâtisserie notes; and finally our 2018 Signature Rosé with its beautiful array of fresh summer strawberries, raspberries and English rhubarb, with hibiscus notes and a touch of Chantilly cream.

    2019 Blanc de Blancs

    An early budburst followed by a long, cool and dry season combined to yield a perfect harvest late in October. We created base wines using grapes from our Hilltop single parcel with over 100 days on the vine. The wines underwent alcoholic fermentation and a full malolactic fermentation in traditional oak cask, and then were kept for 36 months on lees. This artisanal wine will age beautifully and reveals the enormous potential of our exceptional English chalk valley terroir, as it evolves to fully express the fresh 2019 vintage.

    2018 Illustration No.1

    Made in small quantities, our latest release and a precursor to our Illustration series, showcasing the very finest, long-aging wines, we feel each vintage in turn has offered us. A proven combination of Chardonnay 95 from our steep Hillside vineyards and Pinot Noir 115 from our Winery Bank vineyard, with 40 months on the lees, fermentation in wood, and a partial-malo, this is a unique sparkling finished in extra brut form. Warm, rich notes of yellow plums and apricots, ripe red apple skins and raspberries, with a savouriness and salinity on the finish that only emphasises its delicacy. Drink any time before 2040!

    2018 Zero Dosage

    Produced in very small quantities for those who already know and love our highly structured blanc de blancs. A beautiful ‘first-pass’ selection of only the very ripest grapes from our Pinot Noir and Chardonnays, looking to maximise the acidity from a warm vintage, with long aging in mind. With 40 months on the lees, fermentation in wood, and a partial-malo this is a unique sparkling finished in zero dosage form.

    2019 Preamble No.2

    An early budburst followed by a long, cool and dry season combined to yield a perfect harvest late in October. We created base wines using Pinot Noir grapes from our east facing winery bank and Chardonnays on our southeast facing hillside, each with over 100 days on the vine.

    The wines underwent alcoholic fermentation and a full malolactic fermentation largely in oak casks and barrels, then were bottled with 36 months on lees. This artisanal wine shows the concentration of our Pinot Noir balanced by fresher, lighter Chardonnay in the cool 2019 vintage.

    A single parcel, all Pinot Noir, sparkling from our south facing Hillside vineyard. The long, dry 2019 vintage allowed grapes to be harvested with over 110 days on the vine. Rich, macerated summer berries and spices shine through with ripe nectarines and peaches on the long finish.

    2018 Blanc de Blancs

    This single parcel wine showcases the exceptional Chardonnay grown in our Hill Top vineyard from the outstanding 2018 vintage.  Perhaps a more delicate and intricate sparkling than its 2017 predecessor, the rich citrus and yuzu notes are all in place today and will undoubtedly evolve beautifully for decades to come.

    A very late harvested ‘third pass’ pick of our Pinot Noirs and Chardonnays from right across our south-facing vineyard parcels. Soft, creamy texture with lemon curd, mandarin, cherry and delicate pineapple notes on the palate.
